Queen of Hearts Cajun Chicken Pasta

Eat me for date night or a nice weeknight meal

Cajun chicken in a creamy sauce with sun-dried tomatoes and scallions on a bed of your favorite pasta (I prefer linguine with this meal).


If you know me, you know I am a pasta lover through and through! I also love recipes that I can have come together in 10-15 minutes because I’m a busy working mom of 2. This recipe costs about $20 to feed a family of 4! 


The meat: Boneless skinless chicken breasts. Yes boneless skinless chicken breasts can be a controversial selection but mixing it in with the cream sauce elevates it so well. We also add butter and flavor so it will not be dry or tasteless. You could substitute boneless skinless chicken thighs if you wish.  Let’s begin.


Ingredients:


1-2 lbs Boneless skinless chicken breasts

3-4 tbsp of butter

Cajun seasonings - to taste on the chicken, I use about 3 Tbsp to marinate for 30mins-4hours (or overnight)

Salt and pepper to taste

1 tsp garlic powder

1 tsp onion powder

16 oz heavy cream

1 bunch of scallions

1/4-1/2 jar of sun-dried tomatoes

1/4 cup Parmesan cheese


What you’ll need

Deep Skillet

Pot for pasta

Large bowl to marinate chopped chicken


Chop chicken to bite size pieces, put in a large bowl with the Cajun seasonings and let marinate. Take out of fridge about 30 minutes before cooking.


In your deep skillet, melt the butter and then sauté chicken. While the chicken cooks, put your pot of water on the stove and bring lightly salted water to a boil. Add pasta. Cook pasta to al dente during the next steps. 


Once the chicken is done, Add chopped scallions and sun-dried tomatoes and cook together for about 3 minutes. Add your heavy cream over the chicken. Season with salt, pepper, garlic power and onion powder. Bring sauce to a light simmer until thickened about 3-5 minutes. Keep your eye on it because times vary. Taste sauce along the way, if you want to add more Cajun to the sauce I would recommend only a pinch or two keeping in mind the chicken will bring the spice through as well.


Once pasta is done, ladle/strain out of the pot and straight into the deep skillet to combine with chicken and vegetables. 


Serve and sprinkle Parmesan cheese on top to taste.
